Skilpaddop Dry White
Origin:
Stellenbosch is the area of origin
of all the grapes that are used in the Skipaddop range.The temperate climate of the region is enhanced by the cool sea breeze from False Bay,cooling the vineyards in the late afternoons and evenings during summer.These factors contribute to the unique characteristics and flavour components in our wines.
Vinification:
The grapes were handpicked. After the grapes were destemmed and crushed, no skin contact is employed, as this technique leads to coarse wines, due to the higher tannin and phenol extraction. The juice is settled in stainless steel tanks for 48 hours at a low temperature of 12°C, before inoculation with a desired yeast strain. The fermentation process took 28 days. Some fining with islinglass was necessary. Before bottling the wine was sterile filtered and made protein and cold stable.This wine is a blend of Sauvignon Blanc and Colombar
Tasting Notes: The wine appears clear and bright with hints of green and light yellow colour. The nose is clean and crisp with intense green aromas. Combination of fresh asparagus, green peppers and grass. Some floral peachy, apricot with a hint of almond. The complex aromas follow through to the palate and combine with the wines lively acidity. The wine has a long finish as it remains crisp, green and lively on the palate.

Chenin Blanc
Origin:
Stellenbosch is the area of origin
of all the grapes that are used in the Skilpadvlei wines.The temperate climate of the region is enhanced by the cool sea breeze from False Bay,cooling the vineyards in the late afternoons and evenings during summer.These factors contribute to the unique characteristics and flavour components in our wines.
Vinification:
Made reductively. Grapes were harvested cool. Stopped harvesting at 25ºC. Grapes were given ± 8 – 10 hours skin contact. Used enzymes to help extract flavours while on skin. VIN 13 Yeast was used.
Tasting Notes: Lovely nose of tropical fruit lifted with some green apple and honeysuckle tones; nicely rounded and easy drinking with a refreshing finish. Enjoy now or within the next two years. |

Sauvignon Blanc
Origin:
Stellenbosch is the area of origin
of all the grapes that are used in the Skilpadvlei wines.The temperate climate of the region is enhanced by the cool sea breeze from False Bay,cooling the vineyards in the late afternoons and evenings during summer.These factors contribute to the unique characteristics and flavour components in our wines.
Vinification:
The grapes were hand harvested at optimal ripeness. They were then destalked and crushed. The mash was cooled to 10°C and skin contact followed for 8 hours. The average temperature during fermentation was 12°C. After fermentation the wine was left on its lees for one month. Protein and tartrate stabilization took place before bottling.
Tasting Notes:
The wine is full and dry with well-balanced acid. It has tropical fruit, flintiness and hints of asparagus and figs on the nose that all follow through to the palate. Enjoy now or within a year to really appreciate the fruitiness.

Skilpaddop Pinotage Rosè
Origin:

of all the grapes that are used in the Skilpaddop range.The temperate climate of the region is enhanced by the cool sea breeze from False Bay,cooling the vineyards in the late afternoons and evenings during summer.These factors contribute to the unique characteristics and flavour components in our wines.
Vinification:
Traditional methods were used from selected Pinotage cultivars that are suited for the production of rose wines. The juice was separated early from the skins and pressing was done at low levels. Fermentation took place at low temperatures and stopped at the desired sugar level for the best quality. After fermentation the wine is filtered and bottled.
Tasting Notes: Light rose colour with overwhelming flavours ranging from raspberry to floral sensations. A perfect balance between freshness and perfect amount of sugar creating velvety end. Enjoy now. |

Skilpaddop Merlot / Pinotage
Origin:
Stellenbosch is the area of origin
of all the grapes that are used in the Skilpaddop range.
Vinification:
The grapes are hand-harvested at optimal ripeness. They are then destalked, crushed and fermented for 3 days on their skins in open fermenting tanks. The average fermentation temperature is 32°C. After fermentation the skins are pressed in traditional basket presses. The free run and pressed juices are combined and malolactic fermentation spontaneously takes place in the tank. The wine is then racked into 225L oak barrels (80% French, 20% American) for 4 months. After barrel maturation the wine is blended (Merlot and Pinotage), fined, filtered and bottled.
Tasting Notes:
The wine has a deep ruby colour. The cherry and red berry character of the Merlot is apparent and complimented by the banana and plum fruitiness of the Pinotage. Lovely harmonious blend. To be enjoyed now, but can be aged for another 2 – 3 years.

Cabernet Sauvignon / Shiraz

Vinification:
The grapes are hand-harvested at optimal ripeness. They are then destalked, crushed and fermented for 3 days on their skins in open fermenting tanks. The average fermentation temperature is 32ºC. After fermentation the skins are pressed in traditional basket presses. The free run and pressed juices are combined and malolactic fermentation spontaneously takes place in the tank. The wine is then racked into 225L oak barrels (80% French,20 % American) for 4 months. After barrel maturation the wine is blended (Cabernet Sauvignon and Shiraz), fined and bottled.
Tasting Notes:
The wine has a deep garnet colour. Spicy and peppery on the nose with well integrated berry flavours from the Cabernet. A medium to full bodied wine with lots of fruit and a lingering after taste. Can be enjoyed now – will also benefit from 3 –5 years bottle maturation

Skilpadvlei ML Joubert - Flagship Red
Origin:

of all the grapes that are used in the Skilpadvlei wines.
Vinification:
Grapes are harvested by hand at optimal ripeness The ML Joubert is a bordeaux blend of 50% Cabernet Sauvignon and 50% Merlot.This unique blend was
matured in new French barriques for 18 months.
Tasting Notes:
The black berry flavours of the Cabernet Sauvignon are beautifully complimented by the fruity Merlot undertones. Enjoy now,or within 4-5 years.
